Thanks to the use of beer, the meat turns out tender and soft, while the stew itself has a slight tanginess, adding a pleasant piquancy. 1. Prepare the ingredients for the stew. Peel the potatoes, carrots, garlic, and onion, and rinse them.

2. Remove the meat from tendons, membranes, and fat, then cut it into large pieces. Depending on the type of meat you choose, adjust the stewing time accordingly. If you use lamb, it will become tender in 1.5 hours of cooking; if you use tougher mutton, it will take 2.5 hours.

3. Coat the pieces of meat in flour.

4. Heat a frying pan and add vegetable oil to it. Sear the meat pieces over high heat for 2 minutes on each side, until a golden crust forms.

5. Place the meat into the cauldron together with the juice and remaining vegetable oil, salt and pepper to taste. Add coarsely chopped onion, celery, and carrots to the meat.

6. Pour the beer into the cauldron, bring to a boil, then reduce the heat to low. Simmer the stew for 30 minutes (the time depends on the tenderness of the meat; if the meat is tough, extend the cooking time up to 1 hour). If the liquid reduces too much, you can add some water. Check for salt and spices, and add more if needed.

7. Cut the potatoes into large pieces and add them to the stew one hour before the meat is done, so the potatoes don't become mushy.
