
Irish oat bread
Description
The baking is simple and quick. Buttermilk is usually required for this bread, but it's better not to replace it with kefir. Instead, make buttermilk yourself by mixing warm milk with freshly squeezed lemon juice. Do not neutralize the baking soda either. And remember, soda-based dough should not be overworked. Serve warm or chilled. Perfect with tea.

Prepare all the necessary ingredients before starting work.

Pour the milk into a saucepan and gently heat over low heat until it reaches a temperature of 35-37 degrees. Then remove the saucepan with warm milk from the stove, add freshly squeezed lemon juice, stir thoroughly with a whisk, and let it sit undisturbed for 5 minutes.

Place the oat flakes into the blender bowl.

And turn on the device for about a minute.

In a bowl, combine the crushed oat flakes and milk with lemon juice.

Mix well. Leave the bowl with the uniform oat mixture undisturbed for 2 hours.

Place all the wheat flour into a bowl, add the baking soda, and mix these ingredients with a spoon to distribute evenly.

Then add the flour with baking soda to the oat mixture. Very quickly mix with your fingertips and gather into a ball; you should do this within 4 minutes, no more. Prolonged kneading is inappropriate here, otherwise after baking you'll end up with a dense lump of dough instead of bread.

Transfer the ball of dough you formed during mixing into a pan, the bottom of which you have already sprinkled with flour. Gently press the future bread down with your hand.

Make a cross-shaped cut on the surface of the dough. Place the pan with the future bread into the preheated oven at 180°C and bake for 35–40 minutes. At the 30th minute (not earlier!), open the oven and check the doneness. The crust should produce a dull sound when tapped.

Be sure to cool the bread completely before serving. A slice of this bread spread with butter is simply an incredible delight!
