Description

This bake comes together easily and quickly. Yorkshire cake is all about dried fruit—you can choose whatever you like. I used semi-dried cherries and raisins. You’ll also want good-quality black tea. You can confidently call this cake diet-friendly: there isn’t a gram of butter in it, yet it still turns out wonderfully moist and tender. Cognac can be swapped for dark rum, whiskey, or brandy, or left out entirely. The cake is simple to make, but it takes time. On day one you steep the dried fruit in tea with cognac; you bake the cake only on day two. Serve it with tea or coffee.

    Prepare the ingredients for making Yorkshire pudding.

    Place the black tea in a small bowl.

    Pour boiling water over the tea and leave for 15 minutes so it steeps well and cools slightly.

    Then strain the tea through a sieve.

    Put the dried cherries and raisins into the prepared brew.

    Add cognac to the dried fruit and tea infusion.

    Mix these ingredients and let cool. Cover the bowl with plastic wrap and refrigerate for at least 8 hours.

    You can then start preparing the dough. Crack the eggs into a bowl.

    Add sugar to the eggs.

    Beat the eggs with the sugar using a mixer or a whisk until the mixture turns pale—this will take a few minutes.

    Fold the dried fruits into this mixture—they will have soaked for 8 hours and absorbed nearly all of the cognac infusion. Pour any leftover infusion into the eggs with sugar as well.

    Add the baking powder and flour to the bowl.

    Mix the dough until it has a uniform consistency.

    Pour into a muffin tin greased with vegetable oil. You can simply line it with parchment paper. To be safe, you can grease the paper with oil as well.

    Bake the cake in an oven preheated to 170–175°C for 50–60 minutes. Baking time depends on your oven. Check doneness with a wooden skewer. If it comes out dry when you insert it, the cake is done.

    Remove the finished cake from the oven and let it cool in the pan for 10 minutes. Then take it out, cool completely, slice, and serve.
