
Yogurt cake with cherries
Description
Delicious baked goods for the whole family. You can make a yogurt–cherry cake with just 90 grams of flour! Don’t believe it? It’s the plain truth! The cake turns out beautiful and very tasty; it’s not hard to make—follow the step-by-step recipe and everything will work out. Most importantly, use quality gelatin. The bake is ready. Serve at the table.

Prepare the ingredients.

Separate the whites and yolks of three eggs, beat the whites until stiff peaks form.

Beat the egg yolks with sugar.

Add flour and baking powder to the beaten egg yolks and whisk.

Carefully fold the beaten egg whites into the dough. Preheat the oven to 170 degrees.

Prepare a 22 cm springform pan, grease it with butter, dust with flour, and shake off the excess flour. Spread the dough, level it, and bake for 20–25 minutes.

To make the yogurt filling, soak the gelatin in 3 tablespoons of water as directed on the package, then heat until the gelatin dissolves, to about 60 degrees.

Mix 150 grams of sugar and yogurt, add the juice of half a lemon. Stir heated gelatin into the yogurt mixture; strain if necessary.

Whip the cream until light and fluffy.

Fold the whipped cream into the yogurt layer and mix until smooth and even.

Assemble the cake in a springform pan. To do this, line the sides with acetate strip.

Spread the cake layer with jam and arrange half of the cherries on top.

Spread half of the yogurt filling over the cherries. Put in a cool place for 10–15 minutes to set.

Spread the remaining yogurt filling. Place again in a cool place to stabilize.

Prepare the jelly for the top layer. To do this, soak 5 grams of gelatin in cherry juice and add sugar. Heat the gelatin mixture until the gelatin dissolves. Let the jelly cool slightly.

Pour the jelly over the yogurt layer. Place in a cool spot to set for 2–3 hours, then carefully remove the ring and the acetate strip.
