Description

This wonderful dessert is especially delightful during hot summer days, and the simple recipe for a no-bake yogurt cake will undoubtedly come in handy for every homemaker. It doesn't take long to prepare—the main time is spent allowing the layers to set. You can create various versions of the top layer using different berries and juices. The no-bake yogurt cake is easy to make both at home and at the cottage. It will surely be a hit with all sweet lovers.

    Grind the cookies in a blender into fine crumbs.

    Melt the butter and mix it with the cookie crumbs and 2 tablespoons of sugar. Stir until well combined into a uniform mixture.

    The resulting mixture will be the base of our cake. Transfer it into a springform pan with high sides. If you don't have one, don't worry. Take any container, line it with plastic wrap, and use it as a mold for the future cake. Firmly press the cookie mixture onto the bottom of the pan, creating either a flat surface or one with edges. Then place the base into the refrigerator.

    Soak the gelatin in a small amount of cold water and leave it to swell. Then dissolve half of the gelatin portion in hot milk and set aside to cool. Meanwhile, beat the cream with a whisk until thick foam forms.

    Mix the yogurt, whipped cream, and sugar. The amount of sugar depends on how sweet you like your dessert. I added 2 tablespoons. Slowly pour the cooled gelatin into the yogurt mixture in a thin stream and gently stir. You can use a whisk for this.

    Take the cake pan with the base out of the refrigerator and pour the yogurt-cream mixture into it. Return it back to the refrigerator to set. If desired, you can embed whole or sliced berries into the mixture.

    Make a syrup from water and 2 tablespoons of sugar, heat it, then add the remaining soaked gelatin. Blend and mix with a blender.

    Once the resulting berry purée has cooled down and starts to thicken, pour it over the yogurt layer. Attention – the yogurt layer should already be set! Place the cake into the refrigerator to set. When the top layer is half-set, decorate the cake with sliced strawberries.
