Yogurt cake with peaches and lemon

Description

The recipe won't take much time. The cake is simple to prepare since it doesn't require baking! Just imagine a delicate, airy, melt-in-your-mouth piece of sweet cake... Can you picture it? Now let's get cooking. Serve chilled.

    Step 1

    Line the baking pan with parchment paper. Crush the cookies into crumbs, you can use a coffee grinder. Mix the crumbs with softened butter and firmly press the mixture into the pan. Place the pan in the refrigerator to chill.

    Soak the gelatin in cold boiled water for 40 minutes.

    Add half of the dissolved gelatin to the mashed peaches. Mix well and spread three-quarters of the mixture onto the chilled crust. Place back into the refrigerator. I shaped the jelly into a slightly smaller pastry ring (which I removed after it set) to create a surprise effect in the cake.

    Pour lemon juice into the yogurt, add lemon zest and 2 tablespoons of sugar. Gradually add the remaining dissolved gelatin and whipped cream into the mixture. Mix thoroughly but gently to prevent the cream from deflating. Spread the cream over the jelly layer.

    On top, apply another thin layer of jelly if you have any left. Alternatively, simply decorate with thinly sliced canned peaches (or fresh ones).

    The cake is sent to the refrigerator for the last time for 2-3 hours.
