Instructions
- 1
Step 1

First, prepare the dough. Mix the flour and salt together, blend well, add a few drops of oil and mix with your fingers. Add a little water and knead for a while until you get a soft dough. Knead for 3-4 minutes, then rub the dough with a drop of oil, set aside, and proceed to the filling. Boil the potatoes and grate them on a grater (this is better than simply mashing them with a potato masher).
- 2
Step 2

Add all the filling ingredients to the bowl with the potatoes and mix well.
- 3
Step 3

Take the dough and divide it into 8 equal parts. Roll the filling into 8 balls.
- 4
Step 4

Sprinkle the work surface with flour. With your hands, shape the small piece of dough into a little flat pancake.
- 5
Step 5

Place the filling in the center of the pancake.
- 6
Step 6

Gather the dough around the filling and gently press it together at the top.
- 7
Step 7

Slightly stretch the top and press the area closer to the filling to completely enclose it in the dough.
- 8
Step 8

Trim off the excess tail.
- 9
Step 9

With your hand, gently press the ball flat into a disc, making sure the filling doesn't come out.
- 10
Step 10

Then, roll out with a rolling pin into a thin pancake (choose the thickness yourself, but don't make it too thick).
- 11
Step 11

Dust the pancake well with flour and transfer it to a hot skillet.
- 12
Step 12

Cook on both sides until golden brown. When done, brush lightly with butter and transfer to a plate.
- 13
Step 13

When all the pancakes are ready, serve them in portions and place a small cube of butter on top.
