Apples are an excellent stuffing for any poultry, whether it's turkey, duck, or goose. Did you know that you can stuff poultry not only with fresh apples but also with fermented ones? They impart a unique tart, slightly sour flavor to the meat, and baked fermented apples pair perfectly with it. Today, I'd like to introduce you to a recipe for turkey stuffed with fermented apples. The tanginess of fermented apples gives turkey meat an interesting taste—I highly recommend trying this method of roasting poultry. Below, in the recipe I'm sharing, I explain

    Wash the purchased turkey under running water and rub it with a dry marinade—mix salt, paprika, ground black pepper, a little cayenne pepper, basil, curry, oregano, and coriander.

    Leave the bird to marinate overnight, but if time allows, leave it for two days in a cold place.

    If the fermented apples are large, cut them in half and remove the core. But try to choose small apples, as both the apples and the turkey will turn out tastier.

    Grease a baking sheet with vegetable or olive oil and place the marinated turkey on it. Stuff it with pickled apples and put it in a preheated oven at 190 degrees for 30-40 minutes.

    After half an hour, check the oven and thoroughly baste the turkey with cranberry juice. Return it to the oven for 40 minutes.

    After 40 minutes, reduce the temperature to 170°C. Baste with the fat rendered from the turkey. Cover with foil and return to the oven for another hour. Repeat this procedure every hour for the next 3 hours. Total cooking time for a turkey of this weight is approximately 4 to 4.5 hours.

    20 minutes before the end of cooking, you can remove the foil to get a crispy crust.
