
Turkey with lemon zest and sage
Description
The recipe won't take much time. Juicy turkey with a crispy crust and a fragrant spice aroma is a perfect holiday dish. Serve hot.

1. Preheat the oven to 230 degrees. Grease a baking pan with oil and set aside. Coarsely chop the onion. Set aside 4 sage leaves. Place the onion and lemon zest into a food processor. Pulse to chop. Add the sage, parsley, olive oil, and 1 teaspoon of salt, then blend until smooth. Set aside.

2. Heat 4 sage leaves and butter in a small skillet over low heat until the butter melts. Remove from heat and set aside.

3. Place the turkey on the work surface. Season with salt and pepper. Evenly spread the herb mixture under the skin and on the outside, taking care not to tear it. Place 4 sage leaves under the skin and brush with half of the sage oil.

4. Place the turkey in the oven and reduce the temperature to 200 degrees. After 20 minutes, baste the turkey with the remaining oil and continue roasting for another 20–25 minutes, until done. If the skin starts browning too quickly, cover the turkey with foil. Then remove the turkey from the oven, cover it with a lid, and let it rest for 10 minutes before slicing and serving.
