
Turkey with potatoes in a pressure cooker
Description
Today you can find either a standalone pressure cooker or a multicooker with a pressure cooking function. I have the latter option. This appliance is more modern and convenient to use. You can use any parts of turkey, leave them whole or cut into pieces. After cooking, I mash the potatoes into a puree. Serve the dish hot.

1. Wash the turkey and pat dry with paper towels, then rub with salt and pepper.

2. Sear the turkey with olive oil until a golden crust forms (4-5 minutes per side). Transfer to a plate.

3. Wash and chop the onion, carrot, celery, and garlic. Pour olive oil into the pressure cooker, add the garlic and onion, sauté until soft, then add the carrot and celery. Add bay leaf, thyme, and sage.

4. Place the previously seared turkey legs into the pressure cooker pot and pour in the broth. Put the steaming bowl on top and arrange the peeled and washed potatoes in it. Close the lid and cook using the "Stewing" or "Meat" setting for 20 minutes. After cooking is complete, wait another 10–15 minutes to release the pressure.

5. Open the lid and transfer the potatoes to a bowl, add warm milk, salt, pepper, and grated Parmesan, mash until smooth.

6. Add butter to the puree, mix well.

7. Remove the turkey from the pressure cooker. Prepare the sauce: pour starch diluted in 2 tablespoons of water into the pot, season with salt and pepper to taste. Place the turkey on a serving dish, add potatoes alongside, and pour the sauce over the top.
