As usual, we start by preparing our meat. Rinse the turkey leg thoroughly and begin processing it. Separate the meat from the bones and cut it into large pieces, you can halve them.

Place the turkey meat into a deep bowl and pour soy sauce over it. Mix well and let it marinate for 2 hours. Heat vegetable oil in a wok, then slowly add the meat pieces. Sear the turkey pieces over high heat for 5 minutes on one side, then flip and sear for another 5 minutes on the other side.

While the meat is frying in the cauldron, we start preparing our vegetables. Slice the onion into half-rings, and cut the carrot into small cubes. Add everything to the cauldron in 5-minute intervals, stirring in between.

Now it's time to prepare the potatoes. Peel them and cut into cubes of a size convenient for you. Add them to the pot with the other ingredients and mix well.

We now proceed to the final stage. Add barberry, cumin, a bay leaf, peppercorns, and one teaspoon of salt. At this stage, also pour in 250 ml of water. Mix everything well and cover the pot with a lid. Continue simmering for 20 minutes, until the potatoes are cooked. Now you can confidently serve the dish.
