Wash and dry the turkey. Rub it with salt and pepper on the outside and inside.

Prepare the vegetables: peel and cut into cubes. Chop the herbs.

Add butter, onion, carrot, and celery to the skillet and sauté over low heat for 5 minutes, stirring occasionally.

Mix the ready-made and cooled vegetables with herbs, and season with salt and pepper to taste.

Stuff the turkey carcass with the mixture obtained. Tie the legs and wings of the turkey, and loosely sew up the openings with thread.
