And again my favorite turkey. Well, what can I say, I just can't live without it! Turkey meat is so delicious, I simply can't resist cooking it. Especially since I have a large family and a large turkey too—this is very convenient for me! Today I'm presenting to your judgment my recipe for stuffed turkey with potatoes and mushrooms. Stuffed turkey is an amazing dish. You could even say it's two-in-one: both meat and side dish.

We need to parboil the potatoes that we will use to stuff the turkey. So peel them, cut into large pieces, and boil in slightly salted water.

I have dried mushrooms, so I soak them in boiling water for 15 minutes. Fresh mushrooms just wash and cut into pieces.

While the mushrooms soak and the potatoes boil, peel and finely chop the onion. Then heat a skillet with a small amount of vegetable oil.

Chop the soaked mushrooms coarsely and place them in a frying pan. Sauté over medium heat for 4-5 minutes. Then add the onion and cook until the onion turns golden.

Add the sour cream to the same pan, and let it simmer for another 5 minutes. Don't wander far—you need to keep stirring. After 5 minutes, transfer the filling to a plate to cool.

The potatoes are already half-cooked, just as we need them. Drain the water, then set the potatoes aside to cool.

Set aside some of the potatoes to add to the turkey later, and use the remaining portion for the stuffing. Begin stuffing the turkey: layer the potatoes, alternating with mushrooms and onions, into the cavity of the cleaned turkey.

Now we need to carefully sew up the turkey using thread and a needle. Make sure to sew it well so the stuffing doesn't leak out during baking in the oven.

Mix all the spices, salt, pepper, and thyme in a bowl. Add vegetable oil and stir well. Rub the turkey thoroughly with the resulting mixture.

Place the turkey on a baking sheet and put it in a preheated oven at 180°C (350°F) for 2.5 hours. Periodically check the oven and baste the turkey with its juices. To prevent burning, cover the turkey with foil, then remove the foil towards the end of cooking to allow the bird to brown. One hour before cooking is complete, add the remaining potatoes around the bird. Serve the cooked turkey whole at the table.
