Description

It pairs perfectly with tea and coffee. Imeretian khachapuri made with kefir is easy to prepare. The bake is simple, budget-friendly, and very tasty. These flatbreads can be served with borscht instead of bread, though khachapuri on its own is also a wonderful, satisfying snack. Traditionally, Georgian flatbreads are made with local cheese and matsoni. We can easily replace matsoni with kefir and Imeretian cheese with sulguni. You can use two or more kinds of cheese at the same time. The result will be even tastier, juicier, and more aromatic.

    Prepare all the ingredients.

    Beat the eggs with salt, sugar, and butter.

    Add kefir and baking soda.

    Mix, then add the flour.

    Knead a soft dough, shape it into a ball, cover with a towel, and let rest for 30 minutes.

    Grate the cheese on a coarse grater. Imeretian cheese is easy to swap for sulguni in practice, but I suggest going a step further and adding another cheese of your choice. Mozzarella, brynza, or even any creamy cheese will work.

    Divide the dough into 3 parts.

    Roll each piece into a flat round on a floured surface. Place the cheese filling in the center.

    Gather the entire circumference of the pastry into a skirt shape, joining the ends in the centre. You should get something like a small pouch.

    Turn the piece seam-side down and carefully roll it out with a rolling pin into a circle. Flip it to the other side and go over it again with the rolling pin. The thinner it gets, the better.

    Fry the khachapuri in a dry pan on both sides, covered, over medium heat.
