Melt the sugar over medium heat until liquid. It should turn a caramel color.

Pour in the boiling water and stir until smooth. Next, add the second half of the sugar, the spice mix, and a pinch of salt. Whisk again until all the sugar has fully dissolved.

Add the maple syrup and stir until smooth. Then add the baking soda. The mixture should immediately become lighter and fluffier. Cover the saucepan with a lid and let the mixture rest for 5 minutes. Then pour in the vegetable oil and stir until evenly combined.

Sift the flour with cocoa into a deep bowl. Mix everything until no lumps remain.

Add the liquid sweet mixture. Mix everything.

Start kneading a smooth, slightly sticky dough. It's easiest to begin with a silicone spatula, then finish with your hands.

Roll the dough into a ball, wrap in plastic wrap, and refrigerate for 2 hours.

Roll out the dough into a sheet on a lightly floured surface to 5–6 mm thick.
