Description

Ginger gingerbread with ginger, lemon zest, and honey is the most delicious. The spices combine wonderfully in baking, and the aroma becomes very pleasant. The vanilla liqueur can be replaced by any other aromatic alcohol. But you can also make it without the liqueur; honey and baking soda will fluff the dough well. Inside, the gingerbread is soft, and outside a golden crust bakes.

    Prepare the ingredients.

    Remove the lemon zest. Peel fresh ginger and grate it on a fine grater. Transfer the ginger and lemon to a bowl.

    Add softened butter and vanilla liqueur. You can use any other liqueur or omit it.

    Next, we add salt, sugar, and honey.

    Then, the ground spices and baking soda go into the bowl.

    Place the bowl over a water bath and stir periodically. When all the ingredients have combined, remove the mixture from the water bath.

    Add the flour in small portions and knead the dough. The dough should be soft, then place it in the cold for 20–30 minutes, after which sprinkle a little more flour and mix by hand.

    Roll out the ready dough into a thin layer, about 4 mm, and cut out gingerbread cookies with cutters.

    Place the pieces on a baking sheet lined with parchment paper. Bake at 180-190 °C for about 10-12 minutes.

    The finished gingerbread cookies can be covered with icing. For this, mix powdered sugar and lemon juice. Spread the icing on the cooled gingerbread cookies. Done.
