
Ginger cookies
Description
Homemade treats for tea. This recipe yields about 40 pieces of ginger cookies. If you'd like to make the cookies more spicy, add 1-2 teaspoons of finely grated fresh ginger to the butter mixture, or 1-2 tablespoons of finely chopped ginger to the dry ingredients. Serve with tea or coffee.

1. In a medium bowl, mix flour, baking soda, salt, and spices.

2. In a large bowl, beat the butter and sugar with a mixer at medium speed for 3 minutes. Add the egg and molasses, and beat until combined.

3. Add the dry ingredients and mix at low speed until all ingredients are evenly combined. Wrap the resulting dough in plastic wrap and refrigerate for at least two hours.

4. Preheat the oven to 175 degrees. Line baking sheets with parchment paper or grease them with oil. Shape the dough into balls about 2.5 cm in diameter and place them on the baking sheets about 5 cm apart. Bake the cookies for 10–15 minutes. Cookies baked for 10–12 minutes will be softer, while those baked for 13–15 minutes will be firmer.

5. Let the baked cookies cool on a wire rack for 2 to 5 minutes. Dust with powdered sugar if desired. Store the finished cookies at room temperature for up to a week or in the refrigerator for up to a month. You can prepare the cookies in advance and keep them in an airtight container at room temperature. The cookies will become softer each day.
