
Ginger cookies with icing

1. Put the butter in a saucepan, place over low heat and melt, then set aside to cool to room temperature.

2. Crack the eggs into the blender container, add sugar and honey, then add the cooled melted butter and mix thoroughly.

3. Sift the flour and mix it with the baking powder, add half of it to the mixture and stir.

4. Wash the lemon and orange and grate the zest. Wash the ginger root, peel it, grate finely, then add the zest, ginger, and cocoa, and mix. Add the second portion of flour and knead the dough.

5. Wrap the dough in plastic wrap and refrigerate for several hours to rest.

6. After some time, take out the dough and roll it out to a thickness of 5 millimeters, cut out cookies into any desired shape (whichever you prefer), and bake in the oven at 180-190 degrees for no more than 10 minutes.

7. To prepare the glaze, take chilled egg white, add powdered sugar and a little lemon juice, and mix thoroughly with a fork. Use a piping bag to create a design on the ready cookies.
