
Ginger cookies with rice flour

I offer a gluten-free recipe for ginger cookies made with rice flour. If you want to make ginger cookies even healthier, replace the sugar with a sugar substitute or honey. Otherwise, follow the step-by-step recipe and bake to your health. The bake is ready. Serve at the table.

Prepare the ingredients.

Whisk 1 egg with sugar (or with a sugar substitute, honey).

Pour the melted butter into the mixture.

Mix the rice flour with the dry spices.

Add the flour mixture to the other ingredients and beat. The dough will be crumbly; gather it into a ball.

Roll the dough out to a thickness of 0.8–1 cm; it is best to do this between two layers of plastic wrap.

Use a cookie cutter to cut out the cookies.

Carefully use a knife to transfer the cookies to a baking sheet.

Brush the cookies with egg white before baking. Bake the gingerbread at 180–200°C for 12–15 minutes. They should not be browned too much.

Ginger cookies made with rice flour can be served plain, dusted with powdered sugar, or decorated with icing. I went with the last option. Just in case, here’s how to make it. Mix 1 egg white, 200 grams of powdered sugar, and 0.5 teaspoon of lemon juice. Transfer to a piping bag. This icing makes it easy and quick to decorate the cookies. But you end up with quite a lot of it, so keep that in mind. Ginger cookies made with rice flour are in no way inferior to traditional ginger cookies, neither in taste nor in appearance.
