
Ginger Cookies for the Year of the Snake New Year
Description

Prepare all the ingredients.

To begin, in a thick-bottomed saucepan or sauté pan, melt half the sugar over medium heat until liquid.

The melted sugar should turn a caramel color.

Pour in boiling water and stir until smooth. Next, add the second half of the sugar, the spice mix, and a pinch of salt. Stir until fully dissolved. Bring to a boil.

Add maple syrup and stir until smooth. Then add baking soda. The mixture should immediately become lighter and fluffier.

Cover the saucepan with a lid and let it cool slightly for 5 minutes. Then add vegetable oil and mix until smooth.

Sift the flour into a deep bowl.

Knead a smooth, slightly sticky dough. Shape it into a ball, wrap in plastic wrap, and refrigerate for 2 hours.

For the glaze, add warm water to the icing. Mix and let stand for 5–10 minutes, then beat with a mixer on low speed. The finished glaze can be tinted with food coloring.

Transfer the glaze to a piping bag and snip off the tip. Pipe the glaze onto the cookies. You can cover them completely or pipe decorative patterns. Let the glaze dry.
