
Ginger cookies for the Year of the Rabbit

Prepare all ingredients.

Sift all dry ingredients except the sugar into a deep bowl. Mix together.

In another bowl, beat sugar, butter, and date syrup with vanilla flavouring together with an electric mixer.

Add the dry ingredients to the bowl with the wet ingredients. Mix on low speed with a mixer.

Then shape the dough into a ball with your hands. If needed, add a little more flour or 1–2 tsp water if the dough crumbles apart.

Roll out the dough on parchment paper to a thickness of about 5 mm. Cover with plastic wrap and refrigerate for 1 hour.

Then use cookie cutters to cut out rabbit-shaped cookies. I also roll out the leftover dough and cut out other shapes for variety. Bake the cookies in an oven preheated to 180°C for 10–12 minutes until lightly browned. Then cool completely on the baking sheet.

For decoration I use ready-made glaze. Warm it gently in tepid water, spoon it into a small bag and pipe patterns freely. Leave for half an hour until the glaze sets.
