
Caviar fritters from caviar
Description
If you have only a little caviar on hand but want to feed the whole family, caviar pancakes will come to the rescue. Moreover, you can freeze part of the caviar, if you have a lot, in small bags, so that you have the necessary product on hand for making such pancakes later. The dish has no fishy smell at all; it is tasty, aromatic, and appetizing. Serve it cooled or slightly warm.

Prepare the listed ingredients.

Rinse the roe, thoroughly remove the membranes – there are many of them. Place it in a deep container, crack two chicken eggs into it and add salt. Beat with a fork for 2–3 minutes.

Pour in the water, stir. Add the highest‑grade wheat flour and whisk again.

Leave the dough for 10–15 minutes to activate the gluten in the flour.

Heat a skillet with vegetable oil and, using a tablespoon, place portions of dough into it. Fry over moderate heat so that the ikryaniki do not burn.

Thus, fry all the ikryaniki and place them on a plate lined with a napkin or paper towel to remove excess fat.
