
Fried cod roe
Description
Try serving this accompaniment with fried caviar: crush garlic by hand or with a press, mash it with coarse salt (but don't over-salt), and mix with chopped parsley. Fried caviar also pairs well with a salad made from cooked red beans and fried onions, combined with minced garlic, parsley, black pepper, and salt.

Place the cod roe in a colander and rinse thoroughly under cold running water.

Transfer the caviar to a saucepan, pour in cold water (just enough to cover), add salt, bring to a boil over medium heat, and cook the caviar until it turns white.

Place the caviar in a colander, let excess water drain, and cut the caviar into pieces.

Prepare one bowl with breadcrumbs, beat eggs in another bowl, and heat vegetable or butter oil in a frying pan.

Dip the pieces of roe into beaten eggs, then coat in breadcrumbs, place in hot oil, and fry until golden brown. The breadcrumbs can be seasoned with herbs and spices: dried parsley, garlic, cumin, coriander, sage.

Place the fried caviar onto a plate covered with a paper towel and let it sit for 2-3 minutes to drain excess oil.

Place the prepared roe on a serving dish, sprinkle with lemon juice, and season with freshly ground black pepper. Serve the fried cod roe on toasts, with pita bread, and a fresh vegetable platter.
