
Boiled Zucchini Caviar
Description
This appetizer is quick and easy to make. Delicious zucchini spread is great for canning for winter. But none of that is required—you can also serve it at the table right after cooking. Learn more. Serve with herbs and sauce.

Step 1

First, bring water to a boil in a pot. While it heats, start preparing all the ingredients. Rinse them thoroughly under running water.

We start with the carrots. Cut them into large pieces, then put them in a pot of boiling water. Cook for 20 minutes.

We've taken care of the carrots; next up are the zucchini and peppers. Dice the zucchini into medium cubes, and cut the peppers however you like. Once the carrots have cooked for 15 minutes, add the diced zucchini and peppers.

Finally we come to the only ingredient we’ll be frying—the onion. Slice it into half-rings and fry in vegetable oil until golden.

After boiling all the vegetables and sautéing the onion, blend everything in a blender or run it through a meat grinder. At this point, add grated garlic cloves. Transfer the mixture to a pot and simmer over low heat until reduced, about 40–45 minutes. Then spoon the finished spread into jars and let cool.
