Zucchini Spread in a Redmond Multicooker

Homemade preserves keep for a long time. So, let’s start making zucchini caviar in a Redmond multicooker: 1. Prepare all the vegetables. Peel the zucchini, onion, and carrots. Dice the onion finely; grate the carrots and zucchini on a coarse grater. Remove the seeds from the bell pepper and dice it. 2. Then prepare the multicooker. Pour vegetable oil into its pot. Add the onion and carrots and sauté on the “Bake” setting for 10 minutes. 3. Next, add the pepper to the multicooker pot. Salt all the vegetables, mix, and let them stew for another 5 minutes. 4. Peel the tomatoes. Chop them finely. 5. Now you can confidently add the zucchini, tomatoes, pressed garlic, salt, and sugar to the stewed vegetables. Mix. 6. Turn on the “Pilaf” setting on the multicooker and cook the caviar for one hour. 7. And there you have it — our zucchini caviar in a Redmond multicooker is ready! Now it’s up to you: you can puree it with a blender or run it through a meat grinder, seal it in jars, and make winter preserves (in that case, you should also add a little acid to the caviar — vinegar, for example). Or leave it in pieces and serve it at the table right away! I advise keeping an opened jar in the refrigerator for no more than three days. Jars keep for up to a year in a cool place.
