
Homemade Zucchini Caviar
Description
The recipe will not take much time. In this case, the portion of the finished product is small—enough for a meal, not for canning for winter. If desired, you can also add a little paprika, a pinch of nutmeg, or other spices to the caviar for aroma. Tomato paste can easily be replaced with tomatoes, but it is best to peel them first. It can be served warm or chilled.

1. Pour a little oil into the pan. Add the chopped onion and carrot and sauté for about 5 minutes, stirring.

2. Transfer the diced zucchini to a separate skillet with butter. If they are not very young, it is better to peel the skin.

3. Sauté them briefly until tender.

4. Combine the zucchini with the vegetables. Add the tomato paste.

5. Salt, pepper, and add sugar. If it seems too dry, pour in a little hot water. Leave the vegetables to stew over low heat for about half an hour (the time depends on the size of the zucchini pieces).

6. When the vegetables have softened, puree them until smooth using a blender. Then return to the heat for another 5 minutes so the caviar thickens slightly. Done—let cool and serve.
