
Zucchini Caviar Through a Meat Grinder

A simple way to make ahead for later. Zucchini caviar prepared through a meat grinder is a simple and reliable way to put up a tasty, healthy vegetable appetizer for winter. It comes out smooth and uniform, soft in texture and full of flavor, pairs well with side dishes, or works as a spread on bread. This preserve can be kept for up to a year in an apartment pantry. The preserve is ready for winter storage.

Step 1

Peel and wash all the vegetables. If necessary, peel the zucchini and remove the seeds. Remove the seeds from the bell peppers as well.

Cut the zucchini into small cubes for easier processing in a meat grinder. Score the tomatoes lightly with a knife, place them in a bowl, pour boiling water over them for 30 seconds, after which you will be able to peel off the skin easily.

First, run the zucchini through a meat grinder. Place the zucchini mixture on a separate plate.

Then pass the onion through the meat grinder and transfer it to a separate plate as well.

Next, run the peppers through a meat grinder and transfer them to a separate plate.

Peel the tomatoes and run them through a meat grinder, then transfer to a separate plate.

Into a spacious pot with a thick bottom (I use a cast-iron Dutch oven), pour in vegetable oil and add the carrots and onion.

Fry over medium heat, stirring with a spatula, until the vegetables are cooked through (tender).

Then add the remaining vegetables.

Press the garlic through a garlic press, add salt, sugar, and vinegar. Mix everything together.

Simmer for one hour over low heat with the lid on, stirring the vegetable mixture regularly.

Sterilize glass canning jars and lids in advance using any convenient method. Pack the zucchini caviar into the sterilized jars.

Seal the jars tightly with the lids, turn them upside down, wrap them in a thick blanket, and leave the jars in this position overnight.
