
Beet Caviar — Simple and Inexpensive
Description
The appetizer is quick and easy to make. The caviar looks very attractive, as you can clearly see pieces of bright burgundy beet, orange carrot, and yellow pepper. In addition, the excellent combination of sweet-and-sour vegetables and tomato paste will win everyone over; this dish can be served on its own or as an appetizer or filling for tartlets. Serve with herbs and sauce.

**1.** Add vegetable oil to a skillet and add the beet grated on a coarse grater. Add lemon juice, sugar, salt, and mix.

2. Cover the beets with a lid and braise until done. In a separate skillet, sauté coarsely chopped onion in vegetable oil until golden.

3. Salt the onion, pepper it, add black peppercorns and a bay leaf. Add carrot grated on a coarse grater, mix, and fry until done.

4. Add the chopped bell pepper and cook over medium heat until done. Add the tomato paste, and season with salt and pepper to taste.

5. Add the prepared onion with carrots and pepper to the beets, mix, and cook for a few more minutes.
