
Celeriac Caviar
Description
The appetizer is quick and easy to make. Celery caviar is a very light and tasty appetizer that can be served as an aperitif with carrot sticks. I like it precisely for its lightness—when an appetizer is this light, guests have more room in their stomachs for the main courses. Wash and peel the celery root. Next, cut it into 6–8 pieces and boil in salted water until tender, the same way you boil potatoes. When a knife blade slides in easily, it’s done.

Drain the water from the pot with the celery, leaving just a little at the bottom. Using a blender, purée the celery until soft and smooth.
