Homemade preserves keep for a long time. I want to tell you how to make pattypan squash caviar for winter. It makes an excellent appetizer that pairs well with any side dish and with meat dishes. You can serve it fresh, or you can seal it in jars and enjoy the caviar in winter. The jars keep for up to a year in a cool place.

1. In vegetable oil, first sauté the onion, garlic, and carrot, then add the pattypan squash, diced. When they turn golden brown, add the tomatoes and a little water.

2. Cook the vegetables until tender, then add spices, salt, and sugar to taste. Mix thoroughly.

3. Next, puree the mixture with an immersion blender. Bring to a boil again, let cool, and divide into sterile jars. Seal for winter storage.
