
Carrot Caviar
Description
This appetizer is quick and easy to prepare. Add carrot caviar to your collection of preserves — you're sure to love it. It's very simple to make — chop the tomatoes and carrots in a food processor, place them in a saucepan, add salt, sugar, and oil, and simmer over medium heat for 1.5 hours. Then add garlic pressed through a garlic press and pepper; after 10 minutes add vinegar, and after another 5 minutes the caviar will be ready. Pack it into sterilized jars or cool and serve immediately. It can be served warm or chilled.
