
Onion Caviar for Winter
Description
To prepare onion caviar for winter at home, you need to divide the onion into two parts—blanch one part in a colander, and stew the other with carrots in a frying pan. Once prepared, the dish can be served as a side dish, sauce, or appetizer with the main course. Serve at the table or store in the pantry.

Peel the onions with a knife and place them in a bowl. Peel the carrots and add them to the onions.

Rinse the vegetables under cold water and pat dry. Dice the onion into small cubes and divide equally between two bowls. Grate the carrot on a fine grater and place in a separate bowl.

Bring water to a boil in a kettle. Transfer the onions from one bowl to a colander. Place the bowl on the counter and hold the colander with the onions over it. Start pouring water into the bowl through the colander. Dip it in the boiling water for 2–3 minutes. Now you can put the onions back in the bowl.

Sauté the onion and carrot in vegetable oil in a frying pan. First heat the pan until hot, then reduce the heat sharply and add the onion and carrot to the pan. Sauté for 12 minutes. Stir the vegetables regularly with a spatula. Add the garlic 2 minutes before they are done.

The final step - run all the vegetables through a meat grinder into one bowl. Add sugar, tomato paste, salt, and pepper to the mixture - the caviar is almost ready. Leave it in the refrigerator, and after 12 hours it is ready to eat. The caviar can be stored in jars in a cool place for several months.
