
Squash Caviar per GOST
Description
There are very many recipes online for preparing zucchini caviar according to GOST, and each one claims to be the ultimate truth. Many include celery root in the ingredients. I dare assure you, as a witness to events more than twenty years ago, that such an "exotic" vegetable was not known back then, so no one added it to the caviar. The only vegetables were zucchini, carrot, onion, and tomato paste. And this very simple caviar was always bought and eaten with pleasure. Of course, when prepared at home, it is much tastier. Highly recommended. Serve with herbs and sauce.

Step 1

To prepare zucchini caviar according to GOST, the following ingredients will be required: zucchini, carrots, onions, tomato paste, garlic, salt, sugar, sunflower oil, and vinegar.

Wash the zucchini and cut them into cubes. Place them in a frying pan and pour in 2–3 tablespoons of sunflower oil.

Simmer the zucchini over medium heat, stirring, until done. The liquid should evaporate. Transfer to a bowl.

Peel and wash the carrots and onion. Finely chop the onion and grate the carrots. Place in a frying pan.

Pour 2–3 tablespoons of sunflower oil into the pan with the carrots and onion and sauté until done over medium heat, stirring.

Add the carrots with the onion to the zucchini.

Beat the stewed zucchini, carrots, and onion with a mixer.

Place the vegetable purée in a frying pan. Add tomato paste, salt, and sugar.

Add the garlic, stir, and simmer the zucchini caviar for another 5–10 minutes in the skillet.

The zucchini caviar per GOST is ready. To prepare it for winter, add 9% vinegar, mix, and seal in sterilized jars. Store in a cool place.
