
Fried Zucchini Caviar
Description
Perfect for stocking up for winter. First sauté the vegetables, then puree them until smooth, which makes the spread more fragrant and tender. You get a very tasty, appetizing homemade preserve you won’t want to be without in winter! This kind of caviar will liven up any menu, since it pairs perfectly with any dish—treat your loved ones. Serve at the table or store in the pantry.

Prepare all the ingredients according to the list. If you are making fried caviar for the first time, you can halve the amount of ingredients for a trial batch. From the specified amount of ingredients, I ended up with 4 jars of 400 ml each, with a little left over for tasting.

Cut the zucchini into cubes. If the zucchini are old, remove all the large seeds from inside and peel off the tough skin. Place a frying pan over the heat, pour in half of the vegetable oil, and add the diced zucchini.

Fry the zucchini over medium heat until all the liquid has evaporated and they are soft.

Peel and wash the onion and carrot. Finely dice the onion and grate the carrot. Take another frying pan, pour in the remaining oil, and add the onion and carrot.

Sauté the vegetables over medium heat until the onion is translucent.

Scald the tomatoes with boiling water. With a thin knife, make a cross-shaped cut, lift the tomato skin, and peel it off completely. Dice the blanched tomatoes and add them to the skillet with the onion and carrots.

Fry everything together until the tomato juice comes to a boil. Then add sugar, ground black pepper, and salt to taste. Mix everything well.

Transfer the onion, carrot, and tomato mixture to a large bowl or pot. Add the sautéed zucchini to the same bowl.

Using a blender, blend everything until smooth and purée-like.

Return the puree to the skillet and place over heat. Simmer the zucchini caviar over low heat for about 20 minutes, covered with a lid. At the end of simmering, add minced garlic and, after 2 minutes, pour in the vinegar; heat the caviar for 30 seconds, stirring, then turn off the heat.

Transfer the zucchini caviar while still boiling into pre-prepared sterile jars, seal them with sterile lids, turn upside down, cover with a blanket, and leave like this for 24 hours. Store the finished caviar in a cool place.
