
Homemade Zucchini Caviar

Homemade preserves keep for a long time. I’ll go into more detail below. Jars keep for up to a year in a cool place.

Prepare all the ingredients. Wash all vegetables beforehand.

Cut the zucchini into cubes. Dice the onion into small cubes, and peel and grate the carrot.

Heat a skillet over medium heat and sauté the onion with vegetable oil for a couple of minutes until translucent and soft.

Add the carrots and fry until golden.

Then add the tomato paste, stir, and simmer everything together for another 2–3 minutes.

Transfer the sautéed vegetables to a sauté pan or a heavy-bottomed pot and add the zucchini.

Add salt, sugar, black ground pepper, and coriander.

Cover with a lid and simmer over medium heat for 30–40 minutes, stirring occasionally. The zucchini should be soft by then.

Then blend until smooth. Add the vinegar, bring to a boil, and cook for 1 minute.

Transfer the hot caviar into a clean sterilized jar.

Seal tightly. Turn the jar upside down, wrap it in a towel, and leave it that way until completely cooled.
