
Zucchini Caviar
Description
The appetizer is quick and easy to prepare. Serve the caviar at the table already cooled. You can serve it on a plate or spread it on bread. You can eat this caviar right after preparation or preserve it in jars to enjoy in winter. You can make a spicier caviar by adding hot pepper and garlic. The appetizer is ready. Serve immediately.

Wash the zucchinis and grate them on a coarse grater, sprinkle generously with salt, and leave for 15 minutes, then transfer to a colander and rinse under running water.

Peel the carrots and grate them, dice the onion, mince the garlic, and mix the prepared ingredients with the zucchini.

Transfer all the vegetables to a pot, pour in vegetable oil, and place over medium heat; cook for 30 minutes.

Wash the tomatoes and peel them, then chop them very finely and place them in a pot.

Simmer over low heat for about 45 minutes, add a bay leaf, salt and pepper to taste, and sugar.

Transfer the contents of the pot to a colander to drain off the excess liquid, then transfer the pulp to a blender and puree.

Cool the finished caviar and serve at the table, or seal in jars and put in the pantry for storage.
