
Zucchini Caviar

Works for both holidays and everyday. I’ll go into more detail below. It can be served warm or chilled.

Prepare all the ingredients.

Dice the onion into small cubes, then sauté in a pan with oil for a couple of minutes until translucent.

Add grated carrot. Fry the vegetables for another 3-4 minutes until the carrot turns golden.

Cut the zucchini into very small cubes or grate it on the coarse side of a grater. Add it to the skillet with the remaining vegetables. Braise covered for 15–20 minutes. To keep the vegetables from sticking to the bottom of the pan, you can pour in a little hot water.

Add the minced garlic and tomato paste. Simmer for another couple of minutes, then add salt, sugar, and ground black pepper.

Finely chop the herbs. Add them to the skillet. Mix everything together. Cover the skillet with a lid and let the caviar rest for a while.

Transfer the finished caviar into a glass jar. The zucchini caviar is ready — enjoy your meal!
