
Beet Caviar

Step 1

Select beets from sweet varieties, wash them, and place them in a saucepan. Cover with cold drinking water and put over heat. Cook the beets until tender. The cooking time depends on the size of the vegetable. A large beet will need an hour and a half; a small one will need about an hour.

Peel the onion and rinse it under running water. With a sharp knife, cut it into small cubes. Then place the onion in a skillet with vegetable oil and sauté for five minutes over medium heat.

When the onion becomes translucent and golden, add boiled, peeled beetroot grated on a coarse grater. Also add tomato paste, which can be replaced with tomato juice, pour in brine from the tomatoes, and add sugar, salt, pepper, and a knife tip of citric acid. Braise the roe under a closed lid for five minutes.

Cool the prepared caviar and transfer it to a glass serving dish. Serve as an appetizer.
