
Eggplant caviar in a multicooker

Preparing the eggplants. To keep them from being bitter, peel them, cut them into cubes, and pour brine over them: for 1 liter of water, 1 tbsp of salt. The liquid should completely cover the eggplants. Cover everything with a lid.

Pour vegetable oil into the multicooker. Once it heats up, add the chopped onion. Fry until translucent.

Grate the carrot and add it to the onion. Fry for 5 minutes. Peel and dice the pepper, then add it to the rest of the vegetables in the multicooker for 5 minutes. Drain the brine from the eggplants and add them to the mixture. Fry everything for about 10 minutes.

We dice the tomatoes and put them in the multicooker.

Add chopped garlic, salt, and pepper. Switch the multicooker to the “Stew” mode for 50 minutes. If desired, you can add herbs. That’s all, the eggplant caviar is ready!
