
Homemade Eggplant Caviar

Bake the eggplants in the oven until tender. Pierce them with a fork first, or they will literally explode in the oven. You can also boil the eggplants in water—it makes no difference.

Then let cool slightly and peel.

Remove the seeds and membranes from the bell peppers and wash them. Peel the onion and wash it.

Run the eggplants, bell pepper, and onion through a meat grinder. If you like it spicy, you can add hot pepper.

Wash the tomatoes and also run them through a meat grinder.

Mix all the caviar ingredients and simmer over low heat for 35–40 minutes, stirring occasionally. After 20 minutes of cooking, pour in the sunflower oil and add sugar and salt to taste.
