
Agar-Agar Caviar
Description
The recipe won't take much time. Use only very cold butter, otherwise the caviar will clump together even before it sets. You can take 2 cups of butter and use them one at a time. If the caviar mixture starts to set prematurely, simply heat it again. The finished caviar can be used to garnish rolls and tartlets, or to make sandwiches with it.

Prepare all the ingredients. Put the vegetable oil in the freezer for a couple of hours.

Soak the seaweed in boiling water for a couple of minutes, then drain the water.

Add soy sauce and agar-agar to it and mix well. Place the pot over medium heat. Bring the mixture to a boil and cook for 3 minutes.

Fill the syringe with the liquid and start dripping it into cold oil. You can adjust the size of the pearls.

Drain the caviar in a sieve and let the oil drip off.
