
Georgian-Style Eggplant Ikra

According to the Georgian who gave me this recipe, eggplant dip is made exactly this way in Georgia (of course, in every family the recipe is changed in its own way, with different spices added, etc.). So I’m sharing the recipe. I’ve tried cooking it—it really does turn out very tasty. And it doesn’t take long to make. You can serve it warm or chilled.

Peel the eggplants, slice them, and place them in a frying pan. Pour in oil, sprinkle salt on top, and fry for 15 minutes over medium heat.

Meanwhile, in another frying pan, sauté the finely chopped onion and carrot. Fry over medium heat for 4–5 minutes.

Pass the fried eggplants together with the sweet pepper and garlic through a meat grinder.

Add finely chopped tomatoes, salt, and spices to the sautéed onions and carrots.

Puree until smooth.

In a frying pan, combine vegetable purée with eggplants passed through a meat grinder, add chopped fresh parsley. Mix and heat over medium heat for 3–4 minutes.

Remove from the heat and serve immediately while hot, garnished with sliced hot pepper. The simplest way to serve it is spread on fresh bread.
