
Perfect poppy seed roll
Description
Delicious baked treat for the whole family. This poppy roll turns out very tender, airy, light, and moderately moist when made according to this recipe. I highly recommend preparing a moister filling for this roll so that it stays fresh and soft for longer. This recipe yields two rolls, so feel free to invite friends over for a cup of tea. Note that instead of poppy seeds, you can use nuts or dried fruits ground in a blender. A boiled yeast dough works best for this type of pastry, so I recommend using exactly that in this recipe.

1. For the sponge, mix the sifted flour with 3/4 of the hot milk. Combine the yeast with the remaining warm milk and a spoonful of sugar. Add this to the slightly cooled cooked dough and stir. Cover with plastic wrap and let stand for 30–40 minutes.

2. Combine egg yolks with sugar, vanilla sugar, soft butter, and salt. Mix thoroughly and combine with the risen sponge. Gradually add sifted flour in small portions and knead until you get a soft dough, about 10 minutes.

3. Cover the dough with plastic wrap and let it rise in a warm place for an hour. Pour water over the poppy seeds, bring to a boil, simmer for 15 minutes, then drain and squeeze out the liquid thoroughly. Grind finely using a blender.

4. Roll out the dough into a rectangle on a floured board. Fold the dough into thirds, then fold into thirds again. Cover with a bowl and let rest for 30 minutes. Repeat the same folding process, cover with a bowl, and let rest for another 30 minutes.

5. Beat the egg whites at room temperature until stiff peaks form. Gradually add sugar in small portions while continuing to beat, until stiff peaks form. Gently fold the egg whites into the poppy seed mixture.

6. Divide the dough into two parts and roll each into a 30x30 cm square. Spread the filling evenly and roll up to form a log. Grease the baking paper with butter. Wrap the log loosely in the baking paper and let it rest at room temperature for 30 minutes.

7. Place in a preheated oven at 190 degrees for 35 minutes. Completely cool the rolls without unwrapping.
