Step 1

Peel the bell pepper and onion and chop them. Transfer the vegetables to a mortar and pour in olive oil. Add chopped parsley and garlic, salt, red and black pepper. Grind the mixture in the mortar until it becomes a paste-like consistency.

I use beef wrapped in a thin layer of fat and tied with string. On top, I apply the prepared paste.

Transfer the meat to a ceramic casserole dish. Place it on the middle rack of the oven. Set the temperature to 180 degrees. Additionally, I use a digital barbecue thermometer to monitor the internal meat temperature. I prefer medium doneness, so I set the thermometer alarm to 63–67°C. Cook the meat for 50 minutes.

We leave the cooked meat to rest in the turned-off oven for about 10-15 minutes.
