Perfect Rice for Sushi

Description

A tasty appetizer for any gathering. You can cook the rice in a multi-cooker; it often has a special rice-cooking program. If you don't have a multi-cooker, cook it in a pot. Cook the rice in advance and let it cool before using, then mix it with the required additions. The rice will turn out slightly sweet and sticky, yet still fluffy. The appetizer is ready. Serve immediately.

    1. Place the rice in a colander and rinse it thoroughly under running water.

    2. Gently rub the rice in your hands to remove excess starch from it, but don't overdo it.

    3. When the water becomes clear, drain it and rinse the rice. Transfer it to a saucepan, pour in water, and let it sit for 30 minutes.

    4. After 30 minutes, put the pot of rice on the stove and turn the heat to high; bring to a boil, then reduce the heat to the lowest setting, cover with a lid, and cook for another 15 minutes. After that, turn off the heat and let the rice rest for another 10 minutes without opening the lid. While the rice is cooking, mix the sugar, vinegar, and salt in a small bowl. You can warm it slightly in the microwave so everything mixes together faster.

    5. After cooking the rice, transfer it to a bowl or a wide pot and spread it into an even layer; this is needed so the rice cools down as quickly as possible. Immediately pour the vinegar mixture over the rice.

    6. Gently mix the rice with the vinegar mixture using a rice paddle, taking care not to deform the rice while making sure all of it is coated. Let the rice sit for a while so it dries slightly. The rice is ready when the surface is no longer wet and slippery. Once done, cover the container of rice with a damp towel.
