
Khachins with cheese and herbs
Description
Homemade pastries for tea. Chechil cheese pancakes with cottage cheese can be served with soup or as a standalone dish. We prepare them using dough, cottage cheese, and herbs. Fry in oil in a pan. Serve cooled or slightly warm.

Sift the wheat flour. Add salt and baking powder (or baking soda neutralized with vinegar or lemon juice).

Pour in the kefir and knead the dough.

Cover the finished dough in the bowl with plastic wrap (a bag) and let it rest for 20 minutes.

Mix the soft cheese and herbs until smooth. Add salt and ground black pepper.

Divide the dough into 5 parts. Roll each part into a pancake.

Place 2 tablespoons of filling onto the pancake batter. Gather the edges of the pancake. Seal tightly.

With your fingers, flatten the patty into a thin pancake, making sure the cheese doesn't tear the dough and leak out.

Pour 1 tablespoon of oil into a frying pan. Fry the pancake on both sides until cooked.

Fry all the khachapuri until cooked through. Stack them up. Cover the stack of khachapuri with a deep bowl and let them cool slightly. Serve. It's convenient to eat khachapuri cut into 4-6 pieces.
