
Chechen cheese pies
Description
The recipe won't take much time. We prepare khychins from dough with herbs and cheese, then fry them in a pan. The pastry is ready. Serve at the table.

To prepare, we will need kefir (ideally, ayran), flour, salt, baking soda, feta cheese, dill and parsley, and butter for greasing the flatbreads.

Mix a soft dough from flour, kefir, baking soda, and salt. The amount of flour is approximate and may need to be increased. Knead and slap the dough against the table a few times, then let it rest to become elastic.

Finely chop dill and parsley greens.

Add finely crumbled feta cheese to the greens. Use a fork to mix the filling thoroughly so that no pieces remain that could tear the dough; the feta should be crumbled to a grain-like consistency.

Roll the dough into a sausage, cut it into 6 pieces. Flatten each piece of dough into a flatbread, put as much filling as there was dough.

Gather the dough over the filling and pinch the edges.

Flatten the filled knot and carefully, lifting it, press around the edges to reshape it into a flatbread again.

Very carefully roll out the filled flatbread with a rolling pin into a very thin pancake. The thickness should be no more than 0.5 cm, and the diameter about 20 cm.

Melt the butter in the microwave to brush the cooked khachapuri.

Fry the khachapuri on a dry skillet. After heating the pan, reduce the heat to medium.

The khychiny should not be overly browned; only small light brown spots should appear on the surface.

Transfer the cooked khachapuri to a plate and brush it with melted butter. While the next one is frying, cover the cooked khachapuri with foil or a lid of appropriate size.

Brush the stack of hychins with butter, cover with foil and a towel, and let them sit for a while so they become soft and tender.

You can serve khychins whole or cut the entire stack into pieces. Khychins go very well with a sour cream sauce with herbs and garlic.
