
Balkar-style khychiny with sauce
Description
Delicious baked treat for the whole family. Khychins are Caucasian stuffed flatbreads. They can be used both as bread and as a standalone snack. Khychins are something between stuffed buns, pancakes, and filled flatbreads. I highly recommend trying authentic Balkar-style khychins with sauce—they're delicious, appetizing, and very filling.

Mash the cottage cheese or pass it through a meat grinder.

Mix the mashed cottage cheese with boiled potatoes. The result should be a homogeneous mass.

Form balls from the mixture.

For the dough, put the flour into a container and make a small indentation in the flour. Gradually pour in the salted water and knead until you get an elastic dough.

Pinch off pieces of dough so that there is less dough than filling. Stretch the dough in your hands into a small flat disc. Wrap the filling in the dough, shape into a ball, and pinch the edges closed.

Roll out the flatbreads as thin as possible.

Fry the pancakes until golden brown on both sides.

For the sauce, mix sour cream with minced garlic and dill.
