Description
Homemade pastry for tea. Kefir dough – incredibly great. It's very easy to work with, it rolls out beautifully and doesn't tear. You can experiment with the filling. My favorite version is a combination of potatoes and cheese. Serve warm or chilled. Perfect with tea.

First of all, you need to make the dough.

Pour the kefir into a deep bowl and add the baking soda.

Add sifted flour and add salt.

Knead a uniform dough that doesn’t stick to your hands.

For the potato filling, mash the boiled potatoes into a puree.

For the cheese version, grate the cheese on a coarse grater. For a bit of zest, you can add a little garlic.

Pinch off a piece of dough and roll it out on the table. Form a ball from the filling and place it in the center.

Gather the edges carefully and pinch them.

Roll out the flatbread so that the filling is evenly distributed.

Place the flatbread on a dry skillet and fry it covered over medium heat until golden brown on both sides.
