
Hychin from Lavash
Description
The recipe won’t take much time. Quickly, simply, and inexpensively make khychiny from lavash and feed the family a tasty breakfast or serve them as a snack. This pastry can easily be taken with you on the road, to a picnic, to work, and to school. Don’t forget about hot drinks. Serve them cooled or slightly warm.

Prepare the listed ingredients.

Grate the lightly salted brynza. If the cheese is too wet and soft, freeze it in the freezer for about 15 minutes beforehand.

Rinse the dill greens, chop them and add to the brynza. Mix the filling.

Cut the lavash sheets into three horizontal parts, each about 10–15 cm wide.

Place about 1 tablespoon of filling on the edge of the lavash strip.

Fold one side, forming a triangle, and distribute the filling evenly inside.

Then roll it one or two more times so that all the filling ends up inside and the cuts are not open. Trim the lavash strip and again place the filling on it, shape the remaining pieces.

Heat the pan without oil and place the pieces cut side down. Fry for 1–2 minutes until golden brown. Watch the pieces, as lavash burns very quickly.

Flip the khychinas to the other side and bake for the same amount of time.

Place the hot khychiny on a plate, spread them with butter, and serve them hot with fragrant tea or coffee.
